Marinade:
- 1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon chili garlic sauce or sriracha (optional)
For Garnish and Serving:
- 1 tablespoon chopped fresh cilantro (optional, for garnish)

Instructions
- Prepare the Marinade: In a medium bowl, whisk together the soy sauce, fish sauce, brown sugar, lime juice, sesame oil, garlic, ginger, and chili garlic sauce. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Grill the Skewers: Preheat the grill to medium-high heat. Thread the marinated chicken onto soaked wooden or metal skewers. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.
- Serve: Remove from the grill and let rest for a few minutes. Garnish with fresh cilantro and serve with lime wedges.
Notes
- Soak wooden skewers in water for 20–30 minutes before grilling to prevent burning.
- Serve with jasmine rice, peanut sauce, or a cucumber salad for a complete meal.
