  • 1 pound boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Orzo Bake:

  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1/2 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 cup chopped spinach
  • 1/4 cup kalamata olives (sliced)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon lemon zest
  • juice of 1/2 lemon

Optional Garnish:

  • fresh dill or parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook the Chicken: In a large oven-safe skillet or baking dish, heat olive oil over medium heat. Add chicken, oregano, salt, and pepper, and sauté until lightly browned. Add garlic and cook for an additional minute.
  3. Prepare the Orzo Bake: Stir in the orzo, chicken broth, cherry tomatoes, spinach, and olives. Bring to a simmer, then remove from heat. Stir in lemon juice and zest. Sprinkle feta over the top.
  4. Bake: Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the orzo is tender and the liquid is absorbed.
  5. Rest and Serve: Let the dish rest for 5 minutes before serving. Garnish with fresh dill or parsley if desired.
