Description

Dough:

  • 1 1/2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 2/3 cup plain Greek yogurt
  • 1/4 cup milk
  • 1 tablespoon olive oil

For filling:

  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni or chopped regular pepperoni

Optional topping:

  • melted butter
  • garlic powder
  • dried oregano
  • grated Parmesan

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, salt, Italian seasoning, and garlic powder.
  3. Add Greek yogurt, milk, and olive oil. Stir until a dough forms, then knead lightly until smooth.
  4. Roll the dough out on a floured surface into a rectangle about 1/4-inch thick.
  5. Spread pizza sauce evenly over the surface, then sprinkle with mozzarella and pepperoni.
  6. Roll the dough up tightly into a log. Slice into rolls and place on the baking sheet.
  7. Bake for 18–22 minutes until golden brown.
  8. If desired, brush warm rolls with melted butter and sprinkle with garlic powder, oregano, and Parmesan.
  9. Serve warm with extra pizza sauce for dipping.

Notes

  • Make sure your flour blend includes xanthan gum, or add 1/2 teaspoon separately.
  • Use dairy-free cheese and yogurt for a dairy-free version.
  • Best served fresh but can be reheated in the oven or air fryer.
