For the cake:

  • 1 package (4 ounces) sweet baking chocolate
  • 1/2 cup boiling water
  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 4 large eggs (separated)
  • 1 teaspoon vanilla extract
  • 2 1/2 cups cake flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk

For the coconut-pecan frosting:

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks (beaten)
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.
  2. Melt chocolate in boiling water, stir until smooth, and set aside to cool slightly.
  3. Cream butter and sugar until light and fluffy. Beat in egg yolks one at a time, then stir in melted chocolate and vanilla.
  4. Whisk flour, baking soda, and salt in a separate bowl. Add flour mixture to the batter alternately with buttermilk, beginning and ending with flour.
  5. Beat egg whites until stiff peaks form. Fold into batter.
  6. Divide batter among pans and bake for 25–30 minutes. Cool before removing to wire racks.
  7. For the frosting, combine evaporated milk, sugar, egg yolks, butter, and vanilla in a saucepan. Cook until thickened, then stir in coconut and pecans.
  8. Cool frosting to room temperature before spreading between layers and on top of the cake.

Notes

  • This cake is traditionally not frosted on the sides—just between layers and on top.
  • For a richer version, add a thin layer of chocolate ganache under the coconut-pecan frosting.
