Description

This Garlic Herb Chicken with Mashed Potatoes and Glazed Carrots recipe is a comforting and flavorful meal that is perfect for a family dinner. Tender chicken breasts seasoned with garlic and herbs, served with creamy mashed potatoes and sweet glazed carrots, all come together to create a satisfying and delicious dish.

Ingredients

Scale

For the chicken:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter

For the mashed potatoes:

  • 2 pounds Yukon Gold potatoes (peeled and cut into chunks)
  • ½ cup whole milk
  • ¼ cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste

For the glazed carrots:

  • 1 pound baby carrots
  • 1 tablespoon butter
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon

Instructions

  1. Season the chicken: Season chicken breasts with salt, pepper, garlic, thyme, rosemary, and parsley.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-6 minutes per side until cooked through. Add butter in the last minute of cooking.

  3. Prepare the mashed potatoes: Boil potatoes until tender, then drain and mash with milk, sour cream, butter, salt, and pepper.
  4. Glaze the carrots: Cook carrots in butter, honey, salt, and cinnamon until tender and glazed.
  5. Serve the chicken with mashed potatoes and glazed carrots. Drizzle any leftover garlic herb butter from the skillet over the top for extra flavor.

Notes

  • Use bone-in chicken thighs for more flavor if desired.
  • Add a splash of chicken broth to the pan when cooking the chicken for a pan sauce.
  • Potatoes can be made ahead and reheated gently with a splash of milk.
