For the Brownie Layer:

  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

For the Cookie Layer:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven: to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Make the brownie layer: In a medium bowl, whisk together melted butter and sugar. Add eggs and vanilla extract, and whisk until smooth. Stir in cocoa powder, flour, and salt until just combined. Spread the brownie batter evenly into the prepared pan.
  3. Make the cookie layer: In a separate bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla, and mix until combined. Stir in flour, baking soda, salt, and chocolate chips until a soft dough forms.
  4. Drop spoonfuls of the cookie dough over the brownie batter and gently spread or pat it down to mostly cover the surface (it doesn’t need to be perfect).
  5. Bake: for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs. Cool completely in the pan before slicing into squares.

Notes

  • For extra richness, use dark chocolate chips or add chopped walnuts to either layer.
  • Brookies can be stored at room temperature for up to 4 days or frozen for longer storage.
