Instructions

  1. Heat the skillet: Heat a nonstick skillet over medium heat and add the butter or oil.
  2. Fry the eggs: Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2–3 minutes. Season with salt and pepper. Remove the eggs from the skillet and set aside.
  3. Prepare the tortillas: Wipe the skillet clean if necessary, then place one tortilla in the skillet.
  4. Add cheese and eggs: Sprinkle half of the cheese over the tortilla, place the fried eggs on top, then add sliced avocado and the remaining cheese.
  5. Top with second tortilla: Place the second tortilla on top of the filling.
  6. Cook the quesadilla: Cook for 2–3 minutes until the bottom is golden and the cheese starts to melt. Carefully flip and cook the other side until golden and crispy.
  7. Serve: Remove from the skillet and let cool slightly before slicing into wedges. Serve with salsa, hot sauce, or sour cream if desired.
