For the mushroom mixture:
- 16 oz cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/2 cup vegetable broth or beef broth
- 1/2 cup sour cream
- 1/2 cup shredded Gruyère or Swiss cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup crushed butter crackers or panko breadcrumbs for topping
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Caramelize the onions: In a large skillet, melt butter with olive oil over medium heat. Add sliced onions, salt, and sugar. Cook for 20–25 minutes until deeply caramelized.
- Cook the mushroom mixture: Add mushrooms to the skillet and cook for 8–10 minutes. Stir in garlic, thyme, and black pepper.
- Deglaze the pan: Add broth to the skillet, then stir in sour cream and half of the shredded cheeses until melted.
- Assemble the casserole: Transfer the mixture to a baking dish. Top with remaining cheeses and breadcrumbs.
- Bake: Bake for 20–25 minutes until bubbly and golden on top. Garnish with parsley before serving.
