  • 2 pounds bone-in beef short ribs
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Caramelized Onions:

  • 4 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 tablespoon tomato paste
  • 1/2 cup dry red wine
  • Soup Base:

  • 6 cups beef broth (low sodium)
  • 2 teaspoons Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • Additional:

  • 1 baguette, sliced
  • 2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Season Short Ribs: Generously season short ribs with salt and pepper.
  2. Sear Short Ribs: In a Dutch oven, heat olive oil and sear short ribs until browned. Set aside.
  3. Caramelize Onions: Cook onions and sugar until caramelized. Add garlic and tomato paste.
  4. Deglaze: Add red wine, scraping browned bits. Simmer.
  5. Cook Soup: Return ribs to the pot with broth, Worcestershire sauce, bay leaf, and thyme. Simmer until tender.
  6. Finish Soup: Shred meat, return to soup. Adjust seasoning. Top with bread and cheese.
  7. Broil: Broil soup until cheese is bubbly and golden. Serve hot.
