Jalapeños:
- 12 large jalapeños, halved lengthwise and seeds removed
Shrimp Filling:
- 8 oz cooked shrimp, finely chopped
- 4 oz cream cheese, softened
- ½ cup shredded cheddar cheese
- ¼ cup mayonnaise
- 1 teaspoon Cajun seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons chopped green onions
- 2 tablespoons chopped fresh parsley (optional)
- Hot sauce for drizzling (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the filling: In a medium bowl, combine chopped shrimp, cream cheese, cheddar cheese, mayonnaise, Cajun seasoning, garlic powder, paprika, salt, and pepper. Mix well and stir in green onions.
- Stuff the jalapeños: Spoon the shrimp mixture into each jalapeño half and place on the baking sheet.
- Bake: Bake for 15–18 minutes until the jalapeños are tender and the filling is bubbly and slightly golden.
- Finish and serve: Remove from the oven, cool for 5 minutes, garnish with parsley and hot sauce, if desired, and serve warm.
Notes
- For extra heat, leave some seeds in the jalapeños or add cayenne pepper to the filling.
