Instructions
- Preheat and Toast: Preheat the oven to 400°F (200°C). Arrange the English muffin halves cut-side up on a baking sheet and toast in the oven for 5–6 minutes until they are lightly crisp.
- Prepare Scrambled Eggs: In a skillet over medium heat, melt the butter. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are just set but still soft. Remove from heat.
- Assemble Pizzas: Spoon the scrambled eggs evenly over each toasted English muffin half. Sprinkle the shredded cheddar and mozzarella cheeses on top. Add cooked bacon or sausage if using.
- Bake for Melting: Return the assembled English muffins to the oven and bake for 6–8 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven, garnish with chopped chives or green onions if desired, and serve warm.
