Vegetables:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
Soup:
- 8 cups chicken broth
- 2 cups shredded cooked chicken (rotisserie works great)
- 2 teaspoons dried parsley
- 1 teaspoon dried thyme
- salt and black pepper to taste
- 2 cups egg noodles
Instructions
- Saute Vegetables: In a large soup pot, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened.
- Add Flavors: Stir in garlic and cook until fragrant. Pour in chicken broth, add chicken, parsley, thyme, salt, and pepper.
- Simmer: Reduce heat and simmer for 10 minutes. Add egg noodles and simmer for another 8–10 minutes until tender.
- Adjust Seasoning: Taste and adjust seasoning. Serve hot with crackers or bread.
Notes
- For added richness, stir in a tablespoon of butter at the end.
- This soup freezes well—just cook the noodles separately and add them fresh when reheating.
