  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 cup shredded carrots
  • 3 cups chicken or beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

For the Cheese Sauce:

  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream (optional)

For Garnish:

  • Chopped green onions or crumbled bacon

Instructions

  1. Cook Ground Beef: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, about 5–7 minutes. Drain excess fat if needed.
  2. Sauté Aromatics: Add diced onion and garlic, sauté for 2–3 minutes until softened.
  3. Add Vegetables and Broth: Stir in potatoes, carrots, broth, salt, pepper, and paprika. Bring to a boil, then simmer for 12–15 minutes until potatoes are tender.
  4. Make Cheese Sauce: In a small bowl, whisk flour with milk until smooth. Stir into soup and cook for 5–7 minutes until thickened.
  5. Melt Cheese: Reduce heat, stir in cheddar cheese until melted and smooth. Remove from heat and stir in sour cream if using.
  6. Serve: Garnish with green onions or bacon bits. Serve hot and enjoy!
