- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1 cup shredded carrots
- 3 cups chicken or beef broth

- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
For the Cheese Sauce:
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup sour cream (optional)
For Garnish:
- Chopped green onions or crumbled bacon
Instructions
- Cook Ground Beef: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, about 5–7 minutes. Drain excess fat if needed.
- Sauté Aromatics: Add diced onion and garlic, sauté for 2–3 minutes until softened.
- Add Vegetables and Broth: Stir in potatoes, carrots, broth, salt, pepper, and paprika. Bring to a boil, then simmer for 12–15 minutes until potatoes are tender.
- Make Cheese Sauce: In a small bowl, whisk flour with milk until smooth. Stir into soup and cook for 5–7 minutes until thickened.
- Melt Cheese: Reduce heat, stir in cheddar cheese until melted and smooth. Remove from heat and stir in sour cream if using.
- Serve: Garnish with green onions or bacon bits. Serve hot and enjoy!
