Shortbread Cookies:

- 8 oz semisweet or dark chocolate

Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
- Add dry ingredients: Gradually add the flour and salt, mixing until the dough comes together. Stir in the mini chocolate chips.
- Shape and chill: Roll the dough out on a lightly floured surface, cut into desired shapes, and chill in the fridge for 10–15 minutes.
- Bake: Bake for 12–15 minutes until the edges are just starting to turn golden. Let cool completely.
- Melt chocolate: Melt the dipping chocolate in the microwave in 30-second intervals, stirring until smooth.
- Dip and garnish: Dip half of each cookie into the melted chocolate, place on parchment to set, and add sprinkles or sea salt if desired.
- Set and serve: Let the chocolate harden completely before serving or storing.
Notes
- For extra crunch, use turbinado sugar instead of powdered sugar.
