Instructions
- Combine Ingredients: Add the shredded chicken, Rotel diced tomatoes with green chilies (undrained), cubed cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, sour cream, chili powder, cumin, garlic powder, and a pinch of salt and pepper to a 3–4 quart Crock Pot.
- Cook the Dip: Stir gently to combine the ingredients as much as possible before cooking. Cover the Crock Pot and cook on low for 2–3 hours or on high for 1–1.5 hours, stirring occasionally. Cook until the cheeses are fully melted and the dip is hot and creamy.
- Add Cilantro and Warm: Once the dip is smooth and fully melted, stir in the chopped fresh cilantro if using. Switch the Crock Pot setting to warm to keep the dip ready for serving.
- Serve: Serve the hot dip directly from the Crock Pot. Garnish with sliced jalapeños or green onions if desired.
