- 2 large russet potatoes (peeled and cut into thin sticks)
- 1 small zucchini (grated and squeezed dry)
- 1 small carrot (grated)
- 1 egg
- ¼ cup all-purpose flour
- ¼ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Cheese Sauce:
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- ¾ cup whole milk
- 1 cup shredded sharp cheddar cheese
- ¼ teaspoon salt
- pinch of cayenne pepper (optional)
Instructions
- Potato Sticks: In a large bowl, combine grated zucchini, carrot, and potato sticks. Add egg, flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well. Shape into sticks or fritters. Fry in olive oil until golden and crispy.
- Cheese Sauce: Melt butter in a saucepan. Whisk in flour, then milk. Add cheddar, salt, and cayenne. Stir until smooth. Serve with veggie sticks.
Notes
- You can bake the veggie sticks at 425°F for 20–25 minutes for a lighter version.
- Add chopped spinach or corn for extra veggies.
- The cheese sauce can be made ahead and reheated gently.
