Cauliflower:

  • 1 large head cauliflower (cut into small florets)
  • 3 tablespoons olive oil (divided)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Hummus:

  • 1 (15-ounce) can chickpeas (drained and rinsed)
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 cloves garlic (minced)
  • 24 tablespoons water (as needed)
  • fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare cauliflower: Toss the cauliflower florets with 2 tablespoons olive oil, smoked paprika, cumin, salt, and pepper. Roast for 25–30 minutes until golden and crispy.
  3. Make hummus: In a food processor, blend roasted cauliflower, chickpeas, tahini, lemon juice, garlic, and olive oil until smooth. Adjust consistency with water if needed.
  4. Serve: Transfer hummus to a bowl, drizzle with olive oil, and garnish with reserved roasted cauliflower and parsley.
