Cauliflower:
- 1 large head cauliflower (cut into small florets)
- 3 tablespoons olive oil (divided)
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Hummus:
- 1 (15-ounce) can chickpeas (drained and rinsed)
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 cloves garlic (minced)
- 2–4 tablespoons water (as needed)
- fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare cauliflower: Toss the cauliflower florets with 2 tablespoons olive oil, smoked paprika, cumin, salt, and pepper. Roast for 25–30 minutes until golden and crispy.
- Make hummus: In a food processor, blend roasted cauliflower, chickpeas, tahini, lemon juice, garlic, and olive oil until smooth. Adjust consistency with water if needed.
- Serve: Transfer hummus to a bowl, drizzle with olive oil, and garnish with reserved roasted cauliflower and parsley.
