Sweet Potato Mixture:

- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped green onion (optional)

Instructions
- Preheat oven and prepare baking sheet: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Mix ingredients: In a large bowl, combine sweet potato, cheddar cheese, Parmesan cheese, flour, egg, garlic powder, onion powder, salt, pepper, and green onion. Mix well.
- Shape the bites: Scoop about 1 tablespoon of the mixture and shape into small, flattened rounds. Place on the baking sheet.
- Bake: Lightly spray the tops with olive oil spray. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
- Cool and serve: Let the bites cool for 5 minutes before serving.
Notes
- For extra crispiness, broil for the last 2–3 minutes.
