Pasta:
- 12 ounces pasta (penne or fettuccine)
Sauce:
- 1 tablespoon olive oil
- 1 pound Italian sausage (casings removed)
- 3 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1½ cups baby spinach
- ½ cup sun-dried tomatoes (drained and chopped)
- Salt and black pepper to taste

- Chopped parsley
Instructions
- Cook the Pasta: Boil pasta in salted water until al dente. Reserve ½ cup pasta water, then drain. Set aside.
- Prepare the Sauce: Brown sausage in olive oil. Add garlic, Italian seasoning, and red pepper flakes. Stir in sun-dried tomatoes, broth, and cream. Simmer for 3–4 minutes. Add Parmesan and spinach, cook until wilted.
- Combine and Serve: Toss cooked pasta in the sauce. Add reserved water if needed. Season with salt and pepper. Garnish with parsley.
