  • 1 pound Italian sausage (casings removed)
  • 3 cloves garlic (minced)

  • ½ teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1½ cups baby spinach
  • ½ cup sun-dried tomatoes (drained and chopped)
  • Salt and black pepper to taste

Garnish:

  • Chopped parsley

Instructions

  1. Cook the Pasta: Boil pasta in salted water until al dente. Reserve ½ cup pasta water, then drain. Set aside.
  2. Prepare the Sauce: Brown sausage in olive oil. Add garlic, Italian seasoning, and red pepper flakes. Stir in sun-dried tomatoes, broth, and cream. Simmer for 3–4 minutes. Add Parmesan and spinach, cook until wilted.
  3. Combine and Serve: Toss cooked pasta in the sauce. Add reserved water if needed. Season with salt and pepper. Garnish with parsley.
