Main Ingredients:
- 1 large head of cauliflower (cut into florets)
- 2 cloves garlic (peeled)
- 2 tablespoons unsalted butter
Additional Ingredients:
- 1/4 cup sour cream or plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1–2 tablespoons milk or cream (as needed for consistency)
- Chopped chives or parsley for garnish (optional)
Instructions
- Cook the Cauliflower: Bring a large pot of salted water to a boil. Add cauliflower florets and garlic cloves, then cook for 10–12 minutes, or until cauliflower is very tender.
- Blend the Ingredients: Drain well and transfer the cooked cauliflower and garlic to a food processor or blender. Add butter, sour cream, Parmesan, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.
- Adjust Consistency: Add a splash of milk or cream to reach your desired consistency. Taste and adjust seasoning if needed.
- Serve: Serve warm, garnished with chives or parsley if desired.
