Description

Creamy Cauliflower Mash is a delicious and nutritious alternative to traditional mashed potatoes. This easy recipe results in a smooth and velvety puree that’s perfect for a comforting side dish.

Ingredients

Scale

Main Ingredients:

  • 1 large head of cauliflower (cut into florets)
  • 2 cloves garlic (peeled)
  • 2 tablespoons unsalted butter

Additional Ingredients:

  • 1/4 cup sour cream or plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1–2 tablespoons milk or cream (as needed for consistency)
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Cook the Cauliflower: Bring a large pot of salted water to a boil. Add cauliflower florets and garlic cloves, then cook for 10–12 minutes, or until cauliflower is very tender.
  2. Blend the Ingredients: Drain well and transfer the cooked cauliflower and garlic to a food processor or blender. Add butter, sour cream, Parmesan, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.
  3. Adjust Consistency: Add a splash of milk or cream to reach your desired consistency. Taste and adjust seasoning if needed.
  4. Serve: Serve warm, garnished with chives or parsley if desired.

Notes

  • For an ultra-smooth mash, use a high-powered blender.
  • Make it dairy-free by substituting olive oil and dairy-free yogurt.
