Main Oatmeal Mixture:
- 2 cups old-fashioned rolled oats
- 1½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 large eggs
- 1½ cups milk (dairy or non-dairy)
- ⅓ cup maple syrup or brown sugar
- ¼ cup melted butter or coconut oil
- 2 teaspoons vanilla extract
- ½ cup plain Greek yogurt or sour cream
For the streusel topping:
- ¼ cup flour
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons cold butter, cut into small pieces
Instructions
- Preheat the oven and prepare the baking dish: Preheat the oven to 350°F and grease an 8×8-inch or similar-sized baking dish.
- Mix the oatmeal ingredients: In a large bowl, combine oats, baking powder, cinnamon, and salt.
- Prepare the wet ingredients: In another bowl, whisk together eggs, milk, maple syrup, melted butter, vanilla, and Greek yogurt until smooth.
- Combine wet and dry mixtures: Pour the wet ingredients into the dry mixture and stir until fully combined.
- Spread in baking dish: Spread the mixture evenly into the prepared baking dish.
- Make the streusel topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter until mixture resembles coarse crumbs. Sprinkle the streusel over the oat mixture.
- Bake: Bake for 35–40 minutes until golden and set. Let cool before serving.
