  • 2 large eggs
  • 1½ cups milk (dairy or non-dairy)
  • ⅓ cup maple syrup or brown sugar
  • ¼ cup melted butter or coconut oil

For the streusel topping:

  • ¼ cup flour
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cold butter, cut into small pieces

Instructions

  1. Preheat the oven and prepare the baking dish: Preheat the oven to 350°F and grease an 8×8-inch or similar-sized baking dish.
  2. Mix the oatmeal ingredients: In a large bowl, combine oats, baking powder, cinnamon, and salt.
  3. Prepare the wet ingredients: In another bowl, whisk together eggs, milk, maple syrup, melted butter, vanilla, and Greek yogurt until smooth.
