Description

This Coconut Curry Shredded Beef recipe combines tender beef with aromatic spices, creamy coconut milk, and a touch of sweetness for a flavorful Thai-inspired dish that is perfect served over rice or with naan.

Beef:

  • 2 pounds beef chuck roast

Seasonings:

  • 1 tablespoon coconut oil
  • 1 medium onion (sliced)
  • 3 garlic cloves (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons red curry paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Additional:

  • 1 (13.5 oz) can full-fat coconut milk
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • Chopped cilantro for garnish

Instructions

  1. Sear the Beef: Heat coconut oil in a large pot, season and sear beef on all sides until browned. Set aside.
  2. Cook Aromatics: In the same pot, cook onion until softened. Add garlic, ginger, and spices. Stir in coconut milk, lime juice, and sugar.
  3. Braise the Beef: Return beef to the pot, simmer covered for 3–3.5 hours until tender. Shred beef and simmer uncovered to thicken.
  4. Serve: Garnish with cilantro and serve with desired sides.

  • This dish can also be made in a slow cooker or pressure cooker for convenience.
