Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients: In a separate bowl, whisk melted butter, eggs, buttermilk, and vanilla until smooth.
- Combine Mixtures: Pour wet ingredients into dry ingredients and stir until just combined; do not overmix.
- Add Apples and Nuts: Gently fold in diced apples and nuts if using.
- Bake: Divide batter among muffin cups, sprinkle tops with coarse sugar if desired, and bake for 18–22 minutes.
- Cool and Serve: Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
