  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 1/2 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh dill
  • 1/4 cup crumbled feta cheese

Lemon Dressing:

  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp Dijon mustard
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

To Serve:

  • 4 large lettuce leaves or whole grain wraps

Instructions

  1. Main Salad: In a large bowl, mash half of the chickpeas lightly with a fork, leaving some whole for texture. Add cucumber, bell pepper, red onion, parsley, dill, and feta cheese.
  2. Lemon Dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, Dijon mustard, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the chickpea mixture and toss gently to coat.
  4. Spoon the salad into large lettuce leaves or whole grain wraps.
