Ingredients
Noodles:
8 oz lo mein noodles or spaghetti
Chicken:
1 lb boneless, skinless chicken breasts (thinly sliced)
Vegetables:
2 tbsp vegetable oil (divided), 2 cups broccoli florets, 1 red bell pepper (thinly sliced), 2 carrots (julienned), 3 green onions (sliced)
Sauce:
1/2 cup teriyaki sauce, 2 tbsp soy sauce, 1 tbsp honey, 1 tsp sesame oil, 1 tsp cornstarch mixed with 2 tbsp water (optional for thickening)
Garnish:
sesame seeds for garnish
Instructions
- Cook Noodles: Cook noodles according to package directions until al dente. Drain, rinse under cold water, and set aside.
- Cook Chicken: In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high heat. Add chicken and cook for 4–5 minutes until browned and cooked through. Remove chicken and set aside.
- Prepare Vegetables: In the same skillet, add remaining oil, broccoli, bell pepper, and carrots. Stir-fry for 3–4 minutes until vegetables are crisp-tender.
- Combine: Return chicken to skillet along with cooked noodles. In a small bowl, whisk together teriyaki sauce, soy sauce, honey, and sesame oil. Pour sauce over the noodle mixture, tossing to combine.
- Thicken Sauce: If a thicker sauce is desired, stir in cornstarch slurry and cook for 1–2 minutes until thickened.
- Serve: Garnish with green onions and sesame seeds before serving.
Notes
- For extra flavor, marinate the chicken in a few tablespoons of teriyaki sauce for 15 minutes before cooking.
- You can also swap the chicken for shrimp, beef, or tofu.
