Description

Chicken Piccata:

  • 4 boneless, skinless chicken breasts, halved horizontally and pounded thin
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup brined capers (rinsed and drained)
  • 2 tablespoons chopped fresh parsley
  • lemon slices for garnish (optional)

Instructions

  1. Dredge the Chicken: In a shallow dish, mix the flour, salt, and pepper. Dredge the chicken pieces in the flour mixture, shaking off the excess.
  2. Cook the Chicken: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Cook the chicken in batches for 3–4 minutes per side, or until golden and cooked through. Transfer to a plate and cover.
  3. Make the Sauce: Add chicken broth, lemon juice, and capers to the skillet. Simmer and cook for 3–4 minutes. Stir in remaining butter until the sauce is smooth.
  4. Finish and Serve: Return the chicken to the skillet, spoon the sauce over the top, and simmer for 2 more minutes. Garnish with parsley and lemon slices. Serve hot.

Notes

  • For a richer sauce, you can use white wine in place of half of the chicken broth.
  • Pair with pasta, mashed potatoes, or sautéed vegetables for a complete meal.
