- 1/2 cup dry white wine (optional)
- 1 (28-ounce) can crushed tomatoes

- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Prepare the Chicken: Heat olive oil in a large skillet or Dutch oven. Season chicken thighs with salt and pepper, then sear until golden brown. Remove and set aside.
- Sauté Vegetables: In the same pan, sauté onion and bell pepper until softened. Add garlic and cook briefly.
- Deglaze and Simmer: Deglaze with white wine, then add tomatoes, broth, herbs, and red pepper flakes. Return chicken to the pan, cover, and simmer until tender.
- Finish and Serve: Stir in olives, simmer uncovered briefly, garnish with parsley, and serve hot over your choice of accompaniment.
