  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet or Dutch oven. Season chicken thighs with salt and pepper, then sear until golden brown. Remove and set aside.
  2. Sauté Vegetables: In the same pan, sauté onion and bell pepper until softened. Add garlic and cook briefly.
  3. Deglaze and Simmer: Deglaze with white wine, then add tomatoes, broth, herbs, and red pepper flakes. Return chicken to the pan, cover, and simmer until tender.
