  • 1 tablespoon olive oil
  • 14 oz smoked sausage (sliced into rounds)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 (10.5 oz) can condensed cheddar cheese soup
  • 2 cups chicken broth
  • 1/2 cup milk or heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 1 cup cooked elbow macaroni or small pasta (optional)
  • chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot, add smoked sausage and brown on both sides. Remove and set aside.
  2. Sauté onion until soft, then add garlic and cook.
  3. Add Rotel, cheddar cheese soup, broth, milk/cream, seasonings.
  4. Simmer, return sausage, then add shredded cheese until melted.
  5. If using, add cooked pasta and garnish with green onions before serving.
