For Meatloaf:
- 1½ pounds ground beef
- 1 cup seasoned breadcrumbs
- 2 large eggs
- ½ cup ketchup (divided)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
For Topping:
- 3 cups mashed potatoes (prepared)
- 1½ cups shredded cheddar cheese
- 6 slices cooked bacon (crumbled)
- 2 tablespoons chopped green onions (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Mix Meatloaf: In a large bowl, combine ground beef, breadcrumbs, eggs, ¼ cup ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Press mixture into the prepared dish.
- Bake: Spread remaining ¼ cup ketchup on top of meatloaf. Bake for 25–30 minutes until cooked through.
- Add Toppings: Spread mashed potatoes over meatloaf, sprinkle with cheddar cheese and bacon. Bake for an additional 10–15 minutes until cheese is melted.
- Serve: Garnish with green onions before serving, if desired.
