- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups chicken broth
- 1 cup frozen corn
- 1 ½ cups shredded cheddar or Mexican blend cheese
- Chopped fresh cilantro and lime wedges for serving
Instructions
- Cook Chicken: Heat olive oil in a large skillet. Cook chicken until browned.
- Add Vegetables: Add onion, bell pepper, and garlic. Cook until softened.
- Season: Stir in cumin, chili powder, paprika, salt, and pepper.
- Add Remaining Ingredients: Mix in rice, black beans, diced tomatoes, chicken broth, and corn. Bring to a boil.
- Simmer: Reduce heat, cover, and simmer for 18–20 minutes until rice is cooked.
