  • 1 green bell pepper (chopped)

  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 cup salsa
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • salt and pepper to taste
  • chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil: In a large skillet over medium-high heat, add olive oil.
  2. Cook chicken: Add chicken pieces and cook until browned and cooked through, about 5-6 minutes.
  3. Sauté vegetables: Add onion, bell pepper, and garlic, sauté until softened, about 3-4 minutes.
  4. Add remaining ingredients: Stir in rice, black beans, salsa, chili powder, cumin, salt, and pepper. Mix well and cook until heated through, about 2-3 minutes.
  5. Add cheese: Sprinkle cheddar and Monterey Jack cheeses over the top. Cover with a lid, reduce heat to low, and let cheese melt for 2-3 minutes.
  6. Garnish and serve: Remove from heat, garnish with cilantro if desired, and serve hot.
