For the Cheddar Breakfast Bites:
- 1 cup shredded sharp cheddar cheese
- 4 large eggs
- ½ cup cooked bacon or breakfast sausage, crumbled
- ¼ cup milk
- ½ cup finely chopped spinach (optional)
- ¼ cup chopped green onions
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup biscuit mix (like Bisquick or similar)

Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 375°F (190°C) and lightly grease or spray a mini muffin pan.
- Mix the ingredients: In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Stir in cheddar cheese, bacon or sausage, spinach, green onions, and biscuit mix until combined.
- Fill the muffin cups: Spoon the mixture into the mini muffin cups, filling each about ¾ full.
- Bake: Bake for 15–18 minutes until golden and set.
- Cool and serve: Let cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.

- These can be made ahead and refrigerated for up to 4 days or frozen for up to 2 months.
- Reheat in the microwave or toaster oven.
- Try adding diced bell peppers or swapping in ham for variety.
