For the Cheddar Breakfast Bites:

  • 1 cup shredded sharp cheddar cheese
  • 4 large eggs
  • ½ cup cooked bacon or breakfast sausage, crumbled
  • ¼ cup milk
  • ½ cup finely chopped spinach (optional)
  • ¼ cup chopped green onions
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup biscuit mix (like Bisquick or similar)

Instructions

  1. Preheat the oven and prepare the pan: Preheat the oven to 375°F (190°C) and lightly grease or spray a mini muffin pan.
  2. Mix the ingredients: In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Stir in cheddar cheese, bacon or sausage, spinach, green onions, and biscuit mix until combined.
  3. Fill the muffin cups: Spoon the mixture into the mini muffin cups, filling each about ¾ full.
  4. Bake: Bake for 15–18 minutes until golden and set.
  5. Cool and serve: Let cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
