Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger

Wet Ingredients:

  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract

Additional Ingredients:

  • 3 cups carrots (finely grated)
  • 1 cup crushed pineapple (drained)
  • 1 cup chopped walnuts or pecans
  • 1 cup shredded coconut (optional)

For Cream Cheese Frosting:

  • 8 ounces cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1–2 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat oven and prepare pans: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Combine wet ingredients: In a large bowl, beat sugars, oil, eggs, and vanilla until smooth.
  4. Blend the batter: Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in grated carrots, pineapple, nuts, and coconut if using.
  5. Bake the cakes: Divide batter evenly between prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Prepare the frosting: Beat cream cheese and butter until creamy. Add powdered sugar gradually, then vanilla and milk as needed.
  7. Frost the cakes: Frost cooled cakes and stack if making a layer cake. Garnish with extra nuts if desired.
