For the brownie base:

  • 1 box (18.3 ounces) brownie mix (plus eggs, oil, and water as directed)

For the cheesecake layer:

  • 16 ounces cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the caramel topping:

  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/4 teaspoon sea salt (optional)

Optional garnish:

  • chopped pecans or mini chocolate chips

Instructions

  1. Preheat oven to 350°F. Lightly grease a 9-inch springform pan and line the bottom with parchment paper. Prepare brownie batter according to the package instructions and pour into the prepared pan. Bake for 20 minutes, then remove from the oven (the brownies won’t be fully cooked yet).
  2. While the brownies bake, prepare the cheesecake layer. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla. Pour the cheesecake mixture over the partially baked brownie layer and spread evenly.
  3. Return the pan to the oven and bake for an additional 35–40 minutes, or until the center is set and a toothpick inserted comes out mostly clean. Let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  4. Before serving, drizzle with caramel sauce and sprinkle with sea salt, pecans, or chocolate chips if desired. Slice and serve chilled.

Notes

  • To prevent cracking, avoid overmixing the cheesecake layer and bake in a water bath if preferred.
