For the Dumplings:
- 2 large apples (Granny Smith or Honeycrisp), peeled and cored
- 1 sheet refrigerated pie crust (or homemade)
- 4 soft caramels (or 4 teaspoons caramel sauce)
- 1/4 cup chopped pecans or walnuts (optional)
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 egg (beaten, for egg wash)
- 1 tablespoon milk (for egg wash)
- Butter for greasing
For the Sauce:
- 1/2 cup brown sugar
- 1/2 cup water
- 1/4 cup unsalted butter
- 1/2 teaspoon vanilla extract
Instructions
- Preheat and Prepare: Preheat oven to 375°F (190°C) and lightly butter a small baking dish. Roll out the pie crust and cut into 4 equal squares.
- Assemble Dumplings: Cut each apple in half and place one half, cut-side down, in the center of each square. Fill each apple with a caramel and nuts if desired. Fold corners up and seal.
- Add Egg Wash and Sugar: Brush dumplings with egg wash, then sprinkle with cinnamon sugar.
- Make the Sauce: In a saucepan, combine brown sugar, water, and butter. Simmer, then stir in vanilla extract. Pour around dumplings.
- Bake: Bake for 35–40 minutes until golden and tender. Let cool slightly before serving.
