  • 1/4 cup cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 6 tablespoons unsalted butter (browned)
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Brown the Butter: In a small saucepan, melt the butter over medium heat until golden brown and fragrant, about 5–7 minutes. Set aside to cool slightly.
  2. Prepare the Pie: Preheat the oven to 375°F (190°C). Roll out one pie crust and place it in a 9-inch pie dish. In a bowl, combine strawberries, peaches, sugars, cornstarch, cinnamon, salt, vanilla, lemon juice, and brown butter. Pour into the crust.
  3. Top the Pie: Add the second crust in a lattice pattern or as a full top crust with slits. Seal and crimp edges. Brush with egg wash and sprinkle with coarse sugar.
  4. Bake and Serve: Bake for 50–60 minutes until golden and bubbly. Cool for 2–3 hours before slicing.
