- 4 cups fresh broccoli florets
- 1/2 cup shredded carrots
- 1/2 cup dried cranberries
- 1/2 cup sunflower seeds
- 1/3 cup finely chopped red onion
- 6 slices bacon (cooked and crumbled)
- 1/2 cup shredded cheddar cheese
Creamy Dressing:
- 3/4 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Prepare Salad: In a large bowl, mix broccoli, carrots, cranberries, sunflower seeds, red onion, bacon, and cheddar cheese.
- Make Dressing: In a small bowl, whisk mayonnaise, vinegar, honey, salt, and pepper until smooth.
- Combine: Pour dressing over salad and toss to coat. Chill for 1 hour before serving.
- Enjoy: Stir well before serving.
Notes
- For a lighter version, substitute Greek yogurt for some or all of the mayonnaise.
- Prepare a day ahead but add bacon just before serving for a crunch.
