Instructions
- Prepare the Crust: Preheat the oven to 325°F (163°C). Combine chocolate cookie crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan and bake for 8-10 minutes. Set aside to cool.
- Make the Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, sour cream, and melted chocolate. Pour over crust and bake.
- Cool and Chill: After baking, cool the cheesecake in the oven, then refrigerate for at least 4 hours or overnight.
