Ingredients
Scale
Beef and Sauce
- 1 1/2 pounds beef stew meat or sirloin tips, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Accompaniment
- 2 cups cooked white or brown rice
- Fresh parsley for garnish (optional)
Instructions
- Sear the Beef: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add beef tips in batches and sear for 2–3 minutes per side until browned. Remove the browned beef to a plate and set aside.
- Sauté Aromatics: In the same pan, add chopped onions and cook for 3–4 minutes until softened. Add minced garlic and cook for an additional 1 minute until fragrant.
- Simmer the Beef: Return the seared beef to the pan. Pour in beef broth, Worcestershire sauce, soy sauce, dried thyme, black pepper, and salt. Stir to combine everything well. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 45–60 minutes or until the beef is tender.
- Thicken the Sauce: Stir in the cornstarch slurry and continue to simmer uncovered for another 3–5 minutes until the sauce has thickened to a gravy consistency.
- Serve: Spoon the beef tips and rich gravy over warm cooked rice. Garnish with fresh chopped parsley if desired and serve immediately.
Notes
- For added richness and flavor, stir in a tablespoon of butter at the end of cooking before serving.
- You can prepare this dish in a slow cooker by cooking on low for 6–8 hours, then stirring in the cornstarch slurry and cooking uncovered on high for 15 minutes to thicken the sauce.
- Use brown rice for a higher fiber option and a nuttier flavor.
- Make sure not to overcrowd the pan when searing the beef to ensure proper browning.
