- 3 lbs beef chuck roast (cut into large chunks)
- 1 tablespoon olive oil
- 1 large onion (sliced)
- 4 cloves garlic (minced)
Seasoning:
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Liquid and Garnish:
- juice of 2 oranges (about 1/2 cup)
- juice of 1 lime
- 1/2 cup beef broth
- chopped cilantro and lime wedges for serving
Instructions
- Sear the Beef: Heat olive oil in a Dutch oven, sear beef until browned, then set aside.
- Sauté Aromatics: Sauté onion, add garlic, then spices.
- Simmer: Add juices, broth, and beef back to pot. Simmer until tender.
