Shrimp and Rice Casserole:

  • 1 pound large shrimp, peeled and deveined
  • 1 cup long-grain white rice (uncooked)
  • 2 1/4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Monterey Jack or mozzarella cheese
  • 1/4 cup chopped fresh parsley or green onions (for garnish)
  • lemon wedges for serving

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sauté vegetables: In a large oven-safe skillet or casserole dish, heat olive oil and butter. Sauté onion and bell pepper until softened. Add garlic, paprika, oregano, salt, and pepper.
  3. Add rice and broth: Stir in uncooked rice, then pour in the chicken broth and bring to a simmer.
  4. Bake: Cover the skillet and bake for 35 minutes. Remove, stir, add shrimp and cheese, then bake uncovered for 10–12 minutes.
  5. Garnish and serve: Garnish with parsley or green onions and serve with lemon wedges.

Notes

  • For extra flavor, use Cajun seasoning instead of paprika and oregano.
  • You can add frozen peas or spinach during the last 10 minutes for extra veggies.
