Description

This Amish-style apple and cinnamon baked oatmeal is a comforting and nutritious breakfast option. The hearty oats, sweet apples, and warm cinnamon flavors combine to create a satisfying dish that is perfect for a cozy morning meal.

Ingredients

Scale

Dry Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1/2 cup brown sugar (or coconut sugar)
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Wet Ingredients:

  • 1 1/2 cups milk
  • 2 large eggs
  • 1/4 cup unsalted butter (melted and slightly cooled)
  • 1 teaspoon vanilla extract
  • 2 medium apples (peeled, cored, and diced)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Prepare the dry ingredients: In a large bowl, combine the oats, brown sugar, baking powder, cinnamon, salt, and walnuts if using.
  3. Mix the wet ingredients: In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Combine and bake: Add the wet ingredients to the dry ingredients and stir to combine. Gently fold in the diced apples. Pour the mixture into the prepared baking dish and spread evenly. Bake for 35 to 40 minutes or until the center is set and the top is golden brown. Let cool slightly before serving.

Notes

  • Serve warm with a splash of milk or a dollop of yogurt.
  • For a dairy-free version, use almond milk and coconut oil.
  • Leftovers can be stored in the fridge and reheated throughout the week.
