Description

Delicious almond croissants made with day-old croissants filled with a smooth almond butter mixture and topped with sliced almonds and powdered sugar. This easy French bakery-style pastry is perfect for breakfast or dessert and features a crisp, golden exterior with a rich, nutty filling.

Ingredients

Scale

Main Ingredients

  • 4 day-old croissants
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1 cup almond flour
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1 tablespoon all-purpose flour
  • 1/4 cup sliced almonds
  • Powdered sugar (for dusting)

Optional Syrup

  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Make the Optional Syrup: In a small saucepan, combine water and sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves completely. Remove from heat and stir in almond extract. Set aside to cool. This syrup adds moisture and flavor to the croissants.
  3. Prepare the Almond Filling: In a medium bowl, cream together the softened butter and granulated sugar until smooth and fluffy. Mix in almond flour, all-purpose flour, eggs, and almond extract until you have a smooth, spreadable almond filling.
  4. Slice Croissants: Slice each day-old croissant horizontally like a sandwich to create two halves.
  5. Assemble Croissants: Lightly brush the inside of each croissant half with the optional almond syrup for extra moisture and flavor. Spread a generous amount of the almond filling on the bottom half, then sandwich the croissant back together. Spread more almond filling on top of each croissant, and sprinkle with sliced almonds for crunch.
  6. Bake Croissants: Place the assembled croissants on the prepared baking sheet. Bake in the preheated oven for 15 to 18 minutes, or until they turn golden brown and crisp on top.
  7. Cool and Serve: Let the croissants cool slightly on a wire rack. Dust with powdered sugar before serving to add a delicate sweetness and beautiful finish.

Notes

  • Using day-old croissants allows them to absorb the almond filling better without becoming soggy.
  • Store any leftovers in an airtight container to keep them fresh.
  • For best texture, reheat leftovers in a toaster oven to maintain crispness.
  • You can omit the optional syrup for a less sweet version.
